We love lamb around here! So when we finally started raising our own, we had to master the best (and easiest) way to cook it. Our favourite for the holidays is a slow cooked leg of lamb roast. This signifies the beginning of our ranch! Hope you enjoy.
Ingredients
- 1 leg of lamb roast, from Sage and Shepherd Ranch
- 3 cloves garlic, sliced
- 1 tablespoon salt
- 1 tablespoon pepper
- 1 tablespoon rosemary
- 1 tablespoon parsley
- 1 tablespoon oregano
- 1 tablespoon chili flakes
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 cups water or chicken broth
- 2 tablespoons bacon fat
- 5 large potatoes, diced
- 3 carrots, diced
Directions
- Heat roasting pan, or cast iron skillet that fits the entire roast, on the stove top. Add bacon fat.
- While the pan is warming, combine all spices together and coat the leg of lamb generously with all seasonings. Add garlic slices to the lamb as well.
- Add the leg of lamb roast to the pan and sear on all sides until golden brown.
- In a slow cooker, add water or chicken broth, then add in the leg of lamb and diced carrots and potatoes.
- Stir and slow cook on high for 6 hours.
