LEG OF LAMB ROAST

We love lamb around here! So when we finally started raising our own, we had to master the best (and easiest) way to cook it. Our favourite for the holidays is a slow cooked leg of lamb roast. This signifies the beginning of our ranch! Hope you enjoy.

Ingredients

  • 1 leg of lamb roast, from Sage and Shepherd Ranch
  • 3 cloves garlic, sliced
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 tablespoon rosemary
  • 1 tablespoon parsley
  • 1 tablespoon oregano
  • 1 tablespoon chili flakes
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 cups water or chicken broth
  • 2 tablespoons bacon fat
  • 5 large potatoes, diced
  • 3 carrots, diced

Directions

  1. Heat roasting pan, or cast iron skillet that fits the entire roast, on the stove top. Add bacon fat.
  2. While the pan is warming, combine all spices together and coat the leg of lamb generously with all seasonings. Add garlic slices to the lamb as well.
  3. Add the leg of lamb roast to the pan and sear on all sides until golden brown.
  4. In a slow cooker, add water or chicken broth, then add in the leg of lamb and diced carrots and potatoes.
  5. Stir and slow cook on high for 6 hours.

Knowing where our food comes from, how it is raised and getting the honor to feed other people with nutrient dense meat that is good for the planet is super fun for us.
